Caprese toast is one of my favorite things to whip up for a quick, healthy breakfast, lunch, or dinner. It’s especially good in the summer season when tomatoes are bursting with flavor. Wondering why all these recipes are topped with toasted hemp seeds?

Hemp seeds are a healthy, vegan source of protein. They’re packed with 10 grams of protein per serving! If you’re vegan or vegetarian and struggling to get enough protein in your life try adding hemp seeds to your diet.

Ingredients:

  • 1 slice of bread
  • 2-3 tablespoons of non dairy cream cheese (or coconut cream)
  • 2 tomato slices
  • handful of chopped basil
  • sea salt
  • black pepper
  • sprinkle of hemp seeds

Directions:

1) Toast your slice of bread.

2) Cut tomato into slices and sprinkle with sea salt and black pepper.

3.) Spread the non dairy cream cheese onto your toast.

4.) Roughly chop the basil.

5.) Top your toast with the tomato slices.

6.) Sprinkle basil and hemp seeds on top.

If you’re a fan of avocado toast you need to try this vegan avocado toast! Instead of just piling avocado slices onto a piece of bread this recipe adds a spicy punch with Sriracha and a tasty crunch with nori sheets. It kind of taste like deconstructed sushi.

For even more flavor you could sprinkle a dash of soy sauce on top. Sprouts are also in season right now, making them even more delicious. If you aren’t vegan and just love toast, try adding smoked salmon on top.

Ingredients:

  • 1 slice of vegan peasant bread
  • 1 nori sheet (seaweed)
  • avocado slices (about half an avocado)
  • sprouts
  • sriracha
  • sea salt
  • sprinkle of hemp seeds

Directions:

1.) Toast your slice of bread.

2.) Place your nori sheet on top of your toast.

3.) Add the avocado slices.

4.) Sprinkle with sea salt and drizzle sriracha on top.

5.) Add the sprouts.

This vegan toast idea is great for breakfast. Instead of just slathering peanut butter onto your toast and calling it a day, this recipe adds sweetness and a seedy crunch. If you’re looking for a little extra indulgence, top it with coconut cream!

You could also use a lot of these same toppings for another take on vegan French toast. Minus the peanut butter. Unless that’s your jam. Load up on the blueberries and dates to satisfy any sweet cravings.

Ingredients:

  • 1 slice of vegan peasant bread
  • 1-2 tablespoons of peanut butter (or almond butter)
  • 7-10 blueberries
  • sprinkle of pumpkin seeds
  • 1 chopped date
  • coconut flakes
  • sprinkle of hemp seeds

Directions:

1.) Toast your slice of bread.

2.) Spread peanut butter.

3.) Line up blueberries diagonally.

4.) Sprinkle chopped dates, pumpkin seeds, coconut flakes and hemp seeds on top.

Finding good vegan bread for your vegan toast can be challenging. Being dairy free eliminates some of the key ingredients in delicious baked goods. No butter, no milk, no eggs. A lot of vegan breads on the market are dry and tasteless.
