5. Paleo
Paleo Peanut Butter Cookie
All Ingredients: 1 C. creamy peanut butter, unsalted ? C. honey 1 whole egg, or a flax egg ½ tsp. baking soda ½ tsp. salt ½ C. chocolate chips Preheat oven to 350 degrees.
Follow directions above and then bake for 8-10 minutes. After 5 minutes of cooling, transfer to wire racks to cool completely.
Dry Ingredients: 1 ¼ C. brown sugar 1 C. whole wheat pastry flour ¾ C. unbleached all-purpose flour ¾ tsp. baking soda ¾ tsp. Salt
Wet Ingredients: ½ C applesauce ¾ C. peanut butter 1 T. vanilla Preheat oven to 375 degrees.
Follow directions above and then bake for 10-12 minutes. After 2 minutes of cooling, transfer to wire racks in order to cool.
3. Low-fat
Low Fat Peanut Butter Cookie
Dry Ingredients: 1 C. unbleached all-purpose flour 1/4 C. whole wheat pastry flour 3/4 C. light brown sugar 1/2 tsp. baking soda 1/2 tsp. baking powder 1/4 tsp. salt
Wet Ingredients: ¼ C. creamy or chunky peanut butter 3 T. butter 1 egg 2 tsp. vanilla Preheat oven to 350 degrees.
Follow directions above and then bake for 8-10 minutes. After 2 minutes of cooling, transfer to wire racks to cool completely.
2. Gluten-free
Gluten Free Peanut Butter Cookie
This is one of my favorite peanut butter cookie recipes. Without the gluten, I feel like I can eat a few more, guilt free.
Dry Ingredients: 1 C. almond flour ½ tsp. salt 1 ½ tsp. ground ginger ¼ tsp. baking soda
Wet Ingredients: ½ C. creamy peanut butter ¼ C. agave nectar 2 T. vegan shortening 1 tsp. vanilla Preheat oven to 350 degrees.
Follow directions above and then bake for 8-10 minutes. After 2 minutes of cooling, transfer to wire racks to cool completely.
